The Napoleon PRO poultry shears are built for that work. The tang and blades are fully stainless steel, and they cut through poultry, ribs, crab and other tough meat and bone without complaint.
Spring tension opens the blades between cuts, which gives you better control and takes some of the effort out of a long prep session. The handles are riveted and suit a left or right handed grip. A safety latch locks the blades closed when the shears go back in the drawer.
Wash them by hand for best performance.
