Smoke comes from smouldering wood, and a gas barbecue gives you a burner to do it over.
The Napoleon stainless steel smoker box is built for Prestige PRO, Prestige Series and Rogue Series gas barbecue grills. It replaces a sear plate directly above a lit burner.
Take out the cooking grids and one sear plate, sit the box on the sear plate supports, fill it with wood chips or chunks and put the lid on. Replace the grids and run the burner underneath on low. The wood smoulders rather than burns, and that is what puts smoke around the food.
Give it at least 20 minutes with the food on the barbecue for the flavour to take. Wait until the barbecue is fully cooled before taking the box out.
